Biodegradation of Fumonisins

Fumonisins are a group of mycotoxins produced mainly by the phytopathogenic filamentous fungi Fusarium verticillioides and Fusarium proliferatum. They frequently contaminate corn and corn based products and cause, ingested with food or feed, several severe diseases in humans and animals. We identified some genes associated with fumonisins degradation by a bacterium isolated from soil. Main objective of our project was to provide recombinant bacteria and yeast strains suitable for enzymatical decontamination of fumonisins in food and animal feed.
